Thanks for watching! This one is so easy and delicious. Here’s the recipe:

Serves 2
Ingredients:
- 2 wholemeal wrap
- 1 cup baby spinach
- 6 baby tomatoes diced
- ½ avocado
- ½ tsp extra virgin olive oil
- 3 mushrooms diced

Tofu scramble
- 200g extra firm tofu
- 2 tbsp nutritional yeast
- ½ tsp turmeric
- Cracked pepper to taste
- 2 pinch salt
- 1/3 cup soy milk
- 1 tsp garlic powder
- Hot sauce (optional)

Instructions:
- Add the olive oil and mushroom to a pan. Cook on medium heat for 3 to 5 minutes until the mushrooms have released their juices.
- Using your hand break the tofu apart. Add to the pan the turmeric, nutritional yeast, garlic powder, pepper, salt and soy milk. Cook for a couple of minutes or until the liquid has evaporated.
- Add the avocado to the wrap and mash it around using a fork.
- Top with the spinach, tofu scramble, baby tomatoes, and hot sauce if using and wrap like a burrito. Enjoy 🤍
