Stir-fried eggplant with rice

Cooked, steamed, stir or deep-fried: eggplant offers so many variations and goes super well with different types of marinades. Eggplant is love ❤️
Recipe for 2 servings:
2 eggplants
1 scallion
2 tbsp soy sauce
2 tbsp doubanjiang
2 tbsp sugar
1 tbsp of crushed garlic
Sesame oil
Sesame seeds
Black pepper
1) Cut the eggplants into bite-sized pieces. Marinate the chopped eggplants with soy sauce, doubanjiang, sugar, sesame oil, black pepper, and crushed garlic in a bowl. Let the eggplants absorb the marinade for a few minutes, then stir-fry in a pan over medium-heat.
2) Make rice for 2 servings. Stir-fry the rice with sliced garlic first (I was being extra careful as the rice was still wet and was adding it to the heated oil), than add water and cook until ready. If you are impatient like me, you can use a press cooker. Otherwise, I recommend using a clay pot to make the rice.
3) Once the rice is ready, add the eggplants on top and let it simmer for a few minutes. Take off from heat and mix well. Sprinkle some sliced scallion and sesame seeds. And voilà, it's ready!
