RECIPE (3-4 servings, 20min prep time):
-2 eggplants
Cut in wedges and heavily salt.
Let sit 10mins, then pat dry.
Heat up oil in a pan and fry the eggplant on medium high heat until charred and soft.
-1 Tbsp each lemon juice and agave
-salt to taste
Toss it.
Tahini sauce:
-4 Tbsp tahini
-1 Tbsp maple syrup
-1 Tbsp lemon juice
-1 Tsp sriracha
-salt to taste
-water to thin
Mix and serve over the eggplant.

In India after frying eggplant in pan we mash it and mix onion green chilli and garlic. It Tastes heaven

Always been aubergine to me. One of those ingredients that you have to find a way to cook that you like (like tofu). I like it now, but never used to when I didn't really know what to do with it.

Ooooo, next time, add some garlic and mash them into paste-y consistency and voila! you get a famous indian dish, "baingan ka bharta" !!! ❤️❤️

... somehow this fits in for Halloween 🎃 just love eggplant. The baked eggplant parmesan were prepped homemade at the Italian restaurant I worked at. Which means they could be made too order. Example; you could get one with white, of red clam sauce, like with sauteed mushrooms if you like with a side of marinara sauce. Some people would get the provolone cheese, or cheddar instead of the mozzarella, which was used in salad prep. The most popular alternative was the lemon butter mushroom sauce from the, 'spinach ricotta cheese pie' ~ everything just about homemade. Even the pasta noodles, except for the lasagna. Dave was a fresh freak. If He gave ME the okay too donate the three gallon containers of pasta to the food pantry/ies;. I would be donating home made French bread too...lots of marinara sauce..Life was good for us then, and the pantries/churches of Evanston Illinois then.

If you dip the raw eggplant in a spicy chickpea flour batter and then deep fry/shallow fry it, you'll have amazing baingan pakora (that's what we call it in India). And of course it's naturally vegan 😍💚

My mom's recipe is cutting it in rounds and mix it with salt, chilli powder, and some garam masala and rest it for 30 minute and fry it.. It's soo tasty

Try roasting it over the open flame then scrape iff the blackened skin and add it to any salad or add garlic paprika cumin tahini and greek yoghurt beautiful dip
