INGREDIENTS

For the vegetable mixture:

- 1 medium onion
- 1 rib celery
- 8 oz cremini or white button mushrooms
- 2 carrots
- 4 cloves garlic
- 1/2 tsp kosher salt
- 1 tbsp minced thyme
- 2 tbsp tomato paste

For the meat:

- 2 large eggs
- 1 lb ground beef
- 1 lb ground pork
- 2 tbsp Worcestershire sauce
- 1 1/2 cups breadcrumbs
- 2 tsp Dijon mustard
- 1 tsp kosher salt
- 3/4 tsp black pepper
- 1 cup beef stock

For the glaze:

- 1/4 cup ketchup
- 2 tsp Dijon mustard

INSTRUCTIONS

- Preheat the oven to 350°F. Have a parchment-lined baking sheet prepared and set aside.

- Roughly chop the onions, carrots, and celery. Clean and quarter the mushrooms. Add the prepared vegetables and garlic to a large food processor, or work in two batches if too large for one batch. Fill the processor and pulse the vegetables until they are finely minced, 10-15 pulses. Without a food processor, the vegetables can be minced by hand.

- In a 4-quart saucepan, warm 2 tablespoons of butter over medium heat. Once the oil is warm, add the prepared vegetables and salt. Sauté the mixture until the vegetables are cooked down and begin to brown, 8-12 minutes. Add the minced thyme and tomato paste and stir into the vegetables. Cook the tomato paste until it darkens and starts to coat the bottom of the saucepan, 4-6 minutes. Once the tomato paste is cooked, remove the mixture from the heat to cool.

- In a large bowl, beat the eggs until smooth. Add the ground beef, ground pork, Worcestershire sauce, breadcrumbs, Dijon mustard, salt, black pepper, beef stock, and cooled vegetable mixture. Stir to combine, and ensure the mixture is well mixed with no pockets of unmixed meat or vegetables.

- Pat the mixture into a loaf shape on the prepared sheet pan, roughly 12 inches by 9 inches. Mix together the ketchup and Dijon mustard and brush the top of the meatloaf. Bake in the preheated 350°F until the center reaches 160°F, 45-60 minutes. Once baked, remove from the oven and cool for 15 minutes before slicing and serving.

Looks tasty. I’m definitely going to try your version of meatloaf. The only difference will be is that I bake my meatloaf in a bunt pan. This way I don’t have to worry about the center being cooked and it serves up very easily. Sometimes I even cook in cupcake pan when I want to freeze single servings for future use. 💕

Thank you!! This gave me some good ideas. Gotta tell you a funny meatloaf story. I moved from Ohio to Texas years ago and in with my then boyfriend and his 3 teen kids. Those kids were all 6-foot something and could eat like nobody’s business! I had been experimenting at the time with different stuffed meatloafs. Well that whole family loved meatloaf and they loved fried okra. Well I decided to do a fried okra and cheese stuffed meatloaf. This thing turned out to be such a monster I had to use a large roasting pan. Unfortunately I chose mozzarella cheese and what happened was while it baked the cheese expanded and when it was done both ends had exploded out and the fried okra and cheese was blown out both ends. I was all upset about it and sat it out for everyone to eat and was fussing around washing dishes and lamenting that I messed it up. I turned around to look at the table. Only about ten minutes had passed since I sat it down. Everyone was gone and there was only about 2 slices of meatloaf left. 😂😂😂

OK, I thought this was crazy, but I had to try a slight variation of it. Way more veggies and less meat, 2/3 veggies - 1/3 meat, different spices, cyan, pepper and garlic, plus I uses powder beef bouillon rather than liquid, I used moose burger and just added it to the food processor and mixed it into the veggies, spices and beef bouillon. Put into a covered glass dish and baked it at 275 F for 3 hours. All the veggie juice turned into almost a gravy! Uncovered it, glazed it as you did and baked it at 350F for 40 minutes more! It turned out AMAZING!! Thank you for the idea!! Very Well Done!!

Kaleb, thanks for the recipe. Love meatloaf and let’s face it, making sandwiches from leftovers is the best! I’ve never put the veggies in the food processor and never used mushrooms but your recipe looked so great I just might have to try doing that.

I needed this last week! My mom used Knorr leek soup mix in her meatloaf which is really good. Surprisingly she didn't put mushrooms in meatloaf cuz she used them in everything! Last week I searched YouTube for something different. I wound up using the box of Stove Top stuffing that I only bought for leftovers at Thanksgiving. It was good but a one off. The best part as you said are the leftover meatloaf sandwiches w/ mayo and more ketchup! I'll try your meatloaf next time. 👍

My grandma and then my mom, made meatloaf like this, with the ketchup. So good!!! We did half and half with the ground beef and pork sausage too. The best!!!

True. Root vegetable peels have most of the vitamins. Unless you’re making a carrot cake / something sweet, leave the clean skins on.
