Funny, my mom always pureed her onion and peppers because she knew I wouldn't eat the meatloaf if I saw the chunks of veggies!

I swear by this meatloaf recipe! I have used this since 3 years ago and yes this is better than my mama's meatloaf. I make mini loaves and do half with BBQ sauce and have plain for those in my family who like gravey.

Great idea! I purée my veggies for Italian meatballs. But for meatloaf I fine chop and caramelize them before adding to mixture. I bake loaf with a pan of water under the rack. Keeps it moist. Delicious?
