Filipino Chicken Adobo Recipe

Makes 4 servings

3 tablespoons canola oil, for sauteeing
1 clove garlic, crushed
1/2 tablespoon peppercorns, cracked
1 whole chicken, cut into pieces
1/2 cup vinegar
1/4 cup soy sauce
water, to cover meat

1 In a medium-sized pot with preheated oil, saute garlic and black peppercorns until brown.

2 Add the chicken pieces and sear until the chicken skin is browned.

3 Pour in the vinegar, soy sauce, and water. Simmer until oil is expressed from the chicken. Serve warm.
