Here are 3 levels of scrambled eggs. 

Level 1: Basic Scrambled Eggs
Beat a couple of eggs and pour them into a pan with a knob of butter and a little salt.

They might be basic, but these are still good. 

Level 2: Upgraded Scrambled Eggs
Pour a couple of scrambled eggs into a cold pan with cold butter and whip them on low heat until they're nice and fluffy. 

Place them right on top of some toasted sourdough with a little butter and some fresh chives. 

This is my personal go-to for scrambled eggs, but we can still do better. 

Level 3: The Ultimate Scrambled Eggs
Get yourself some fresh farm duck eggs and thank me later. Over whip your eggs in a bowl to get extra air into them. 
Add some butter into a pan over low heat before pouring in your eggs. Follow the Tornado Technique by immediately starting to push your eggs from one end of the pan to the other while they cook. It will make them so fluffy and delicious. 

Place directly on some toasted sourdough with some chives or green onion and a little olive oil. 

If you've never tried duck eggs, this is your sign to get some ASAP. They're so rich, so creamy, and perfect for any egg lover.

honestly lvl 2 is the best, cos its most suited to beginners. cold eggs and cold butter in a cold non-stick pan, stir/scrap till you think it looks good to eat.

We have ducks and chickens. The duck eggs have a bit larger and possibly richer egg yolk. They make excellent scrambled eggs. They also work great in baking. Farm raised fresh eggs are nothing like your store bought eggs. Different color, texture, and much better flavor.
