If you’ve ever wondered how to make extra crispy korean fried chicken, here’s what you need to know:

- use dark meat because it’ll be more juicy and less likely to overcook
- season the raw chicken with your favorite spices: i did a simple salt, pepper and garlic
- buy korean fried chicken flour [ 치킨튀김 ] from a korean market, or use potato starch as a substitute
- mix equal parts milk and flour to batter the chicken, then coat it in more flour
- vigorously shake the chicken pieces in a large bowl for better texture
- let the battered and breaded chicken sit on a rack to develop craggily bits which will give you extra crunch
- fry once for 5-7 minutes, then let it cool and double fry for 1-2 minutes

Fried chicken is just one of those dishes best bought outside or made for a group of 20 cause the dish count is making me arms ache in advance. Like I’d be done with the chicken in 20 min and be scrubbing all the dishes piled up for the rest of the day!

For the ppl panicking about the seasoned flour. Just season your regular flour and add corn starch if you want. The corn starch is what help makes it really crunchy like that. 😒😎

Ingredients:

Salt
Paper
Garlic
Milk
Chicken flour/ potato flour

Fried it in medium heat untill slightly brown
And double fried again at higher flame for two to three minutes to make it crispy
And top it off with chicken sauce
Pepper flake (optional) and some spring onion

Here’s a lil tip:
Marinate the dark meat with minced garlic, soy sauce, a shot of Cognac & lite salt.
Power coat using fine or coarse potato starch and deep fry using Canola oil. Double fry for xtra crispy!
Drizzle room temp with Honey and a few dash of fresh cracked black pepper.
