PICKLED RADISH/ DAIKON

These goes GREAT with Korean fried chicken🤤

SWEET
1.5 cups radish, cut into cubes
1/4 cup sugar
1/8 cup vinegar (or 2 TBSP)
1/2 tsp salt
2 TBSP (hot) water

1. Mix your sugar, white vinegar, salt, and water. Mix until sugar dissolves and pour over your radish.
2. Store your radish flat or in a container, whatever you do… make sure each piece of radish touches the brine.

Hot water is the only way to desolve sugar by volume. Cold water will only desolve a small percentage of sugar.
