Garlic Ginger Marinade
- 2 large cloves of garlic
- 2 pieces of ginger (peeled + slightly larger than the garlic)
- 2 pieces of jalapeño (same size as the ginger, or smaller for less heat)
- 3 tbsp low sodium tamari
- 1 tbsp olive oil
- 2-3 tsp maple syrup
- 1 8oz package of tempeh

Steam temeph for about 10 minutes. In the meantime, combine all of the ingredients above (except the tempeh) in a blender and pulse a few times. It doesn't need to be completely smooth. Minced pieces of garlic, ginger, jalapeño is all we're after. Then taste and adjust the tamari or maple to taste, the garlic and ginger will be strong but they mellow during cooking.

Drain the water from the pot and put the tempeh back into the pot. Then pour the marinade over the tempeh, cover and marinate for at least 15 minutes off of the heat. When marinated, roast the tempeh in a 375 degree oven for about 15-20 minutes or until golden brown on top. Slice and serve.

My life changed once I found tahini salad dressing! It’s just tahini, a splash of apple cider vinegar, garlic powder, onion powder, salt and pepper, water. Super easy and is a game changer for my salads!

I love to eat veggies by roasting them in the oven! Roasted cherry tomatoes, asparagus, potatoes, broccoli, garlic, etc!

i usually roast any type of vegetable with a drizzle of olive oil, pink salt, black pepper, and garlic powder until they're nice and soft and they always turn out great

Lately I’ve been so satisfied with the raw vegetables crunch and variety. I’ve been throwing chopped mushrooms on my salads, mincing carrots into any casseroles, and celery into any sandwich I have.

I'm from Morroco, we are used to have a lot of vegetables in our meals, and the commun way to cook them is by steam and in a special pottery cooker. The meals made that way are my fave 😋😋.

I don't happen to have a favorite way to eat veggies, because they are all so different!
Let me just run through my favorites:
1. Potatoes: Oven roasted with lemon, olive oil, broth, salt, pepper and garlic (greek style).
2. Eggplant: Cut up (the hot dog way, not the hamburger way😂) and oven roasted with a thick layer of my favorite marinade: Olive oil, sodium-reduced soy sauce, teriyaki-sauce, tomate puree, salt, pepper, paprika, chili, garlic and water to thin out until spreadable.
3. Cucumber: Cucumber salad (actually your recipe, that is btw just marinating in my kitchen, while my potatoes are cooking)😊.

Favorite way to eat veggies is super roasted with lots of garlic! Asparagus is especially delicious with steak seasoning with the Vio Life parm! 🥰

Toss veggies with olive oil, salt, and cracked pepper. Air fry at 375F for 20 minutes, shaking basket every 5 minutes! Yummy!

I like to air fry my veggies, no oil needed. Reheat at work and add to a chilled garden salad. Love the hot/cold combination.

Can’t decide! I love veggies different ways...cooked, steamed, baked, sautéed, raw! They’re all oh so yummy. Before going vegan 3 years ago, I strongly disliked veggies. Now it’s what a crave.
