What I Ate Today (Vegan, Realistic, Easy)

Plus my favorite homemade protein bar! Recipe below :)
*Vegan Protein Bars*
- 80g pitted dates
- 1 cup peanut butter
- 3/4 cup oats
- 60g unflavored protein powder
- 1/2 cup silk ultra (or any milk)
- 1/4 cup water
- 2 tbsp chia seeds (or hemp or flax)
- 2 tbsp low-calorie sweetener*
- 1 tsp vanilla extract
- 1/4 tsp salt
- 3/4 cup pea protein puffs
- 50g semi-sweet chocolate or chocolate chips
*I use a mix of monk fruit and erythritol
Soak the dates for a few minutes in warm water. Drain and add to a food processor along with everything except the puffs and chocolate. Process into a sticky dough. Move to a bowl and mix in the protein puffs by hand. Grease an 8x8 dish or line it with parchment paper, and press the mixture as evenly as possible. Melt the chocolate (20 sec intervals in the microwave) and pour over the top. Spread out into a thin layer and refrigerate for at least 2 hours before cutting into bars.
