Plus my favorite homemade protein bar! Recipe below :)

*Vegan Protein Bars*
- 80g pitted dates
- 1 cup peanut butter
- 3/4 cup oats
- 60g unflavored protein powder
- 1/2 cup silk ultra (or any milk)
- 1/4 cup water
- 2 tbsp chia seeds (or hemp or flax)
- 2 tbsp low-calorie sweetener*
- 1 tsp vanilla extract
- 1/4 tsp salt
- 3/4 cup pea protein puffs
- 50g semi-sweet chocolate or chocolate chips
*I use a mix of monk fruit and erythritol

Soak the dates for a few minutes in warm water. Drain and add to a food processor along with everything except the puffs and chocolate. Process into a sticky dough. Move to a bowl and mix in the protein puffs by hand. Grease an 8x8 dish or line it with parchment paper, and press the mixture as evenly as possible. Melt the chocolate (20 sec intervals in the microwave) and pour over the top. Spread out into a thin layer and refrigerate for at least 2 hours before cutting into bars.

I consider myself vegetarian on my way to being vegan. Although there are days where I have an intense craving for bacon or shellfish (some of the only meats I like). So there have been instances where I've cheated. My family is unsupportive and cook or eat meals containing that stuff and will even serve it to me. Ultimately I end up nibbling. I feel immense guilt afterwards and feel like I have no right to call myself plant based. I want to vegan for ethical and environmental reasons and yet I feel like I'm a hypocrite. Idk why I'm commenting this. Feels like a confession and I'm trying to beg the universe for forgiveness lol

This is basically how I eat, been vegan for 6 years. No issues sticking to it, or any adverse health issues. There is only 1 downside, all my stuff I bring to the family dinner gets eaten first, usually before I can get any 🥺🥲

I have a very important tip for you. Coat the crispies in the melted chocolate. The fatty layer will protect them from soaking up any liquid!

for the chia seeds, i agree. that’s why i usually blend them with my oats or plain chia seeds so it’s more of a fine “powdery” texture:)

Swayze you've ruined me for other protein bars. I ordered the NuGo dark variety pack and they're sooo good. And so expensive, but I can't ever go back lol. I definitely want to try the Slims next, easy high protein snacks are a must for my job.

P.s. love your videos, I've been watching for a few years and I plan to start transitioning from vegetarian to vegan soon

If you have a coffee or herb grinder, the chia seeds can be blended into a fine powder. I use this for my porridges as I hate getting them stuck in my teeth.

Frozen avocados are great if you freeze them at juuuust the right time when they’re ripe. So, if you ever see a bunch on clearance or have some ripe but don’t want to eat them yet, peel, pit & half them, then freeze and they should defrost pretty well. The pre packaged bags are gonna be really hit or miss

I always think about you when I buy the Siggis new plant-based high protein, lower sugar yogurts and these Silk ones! I like both of them but my husband thinks they taste and feel like an all-natural sunblock! I can't untaste it now- ruined it for me and misery loves company, so here we are.
