DIY Vegan Dark Chocolate Sauce
- 1 tsp refined coconut oil
- 1 tbsp cacao powder
- 1 tbsp maple syrup
- pinch of salt

Melt the refined coconut oil and stir in the cocoa and maple syrup. Mix until smooth and add a pinch of sea salt if desired.

Pour over ice cream for a "magic shell" effect. You can add more sweetener if you like. Enjoy!

My mom used to make the best carrot salad that sounds really weird, but you might like. She wold grate carrots on the larger holes of grater, then add mayo and a handful of raisins. Mix well and let it sit in the fridge for a few hours before serving. Yes, that is it, but I promise it is really good. I'm 51, so my mom was making this in the 70's from recipes she learned in the 40's and 50's and those eras were notorious for odd salads (the woman served cottage cheese on canned fruit and put the same kind of canned fruit in Jell-O) but this one was one of my favorites.

I was craving a burger but didn't have any so I took some a couple frozen vegan meatballs and cooked them on a skillet and smashed them down and threw it on a bun! Lol 🤣

I am not vegan, but really appreciate these videos. Learning about vegan food has helped me make lots of swaps in my diet and also use up things I have on hand. Knowing different ways to cook is never a bad skill to have.

You're so right about root vegetables. They're awesome and very versatile. Love carrots, I'll have them raw, in pancakes, stir-fried...but lately, I've really enjoyed carrot fries. I'll add some oil, paprika, garlic powder, salt and cumin and roast them in the oven. Very simple and very delicious ❤️.

I love this theme as this is ALWAYS how I cook. I'm making waiting the longest possible time between shopping trips a bit of a "game" that I am enjoying. My latest yummy combo? Homemade walnut & pea pesto on steamed Russet potatoes!

Add raisins into the carrot salad and try rice wine vinegar instead of lemon juice. It makes for a sweeter salad, if that’s what you’re in the mood for. Sometimes I add a handful of mixed nuts, too, and it becomes more substantial and filling. You could also add pineapple chunks.

The mushrooms toast looks delicious. I’m going to try that for breakfast. And your yogurt sundae was very fancy looking. You did a great job making meals out of the left over bits you had in the house. A much needed video when we are all trying to keep from going to the store.

I think the carrot-salad-thing is a scandinavian thing. In Denmark we have the same thing, although some add raisins too. We call it "råkost salat".

I tried to use up some food that I had in the freezer and found some Beefless Tips by Gardein. So I decided to cook that on the stove top with some teriyaki sauce and added in some leftover veggies and waited for the mixture to thicken up. After that, I served it with some jasmine rice and sprinkled some sesame seeds on top. I didn’t think it would taste good but it was delicious! 😋

I'm Norwegian and we use lemons, but my in-laws use oranges instead of lemons! They also cut some of the orange up and put it in the carrots, it is really good!
