Ingredients:
16 oz elbow macaroni
2 cups plain unsweetened plant milk (room temp or warm)
1 pack 8 oz vegan cheddar (Violife)
1 pack 8 oz vegan mozzarella (Violife)
1/2 cup plain vegan cream cheese (Violife)
4 tbsp unsalted plant-based butter
4 tbsp plain flour
Salt and pepper to taste
1/2 tsp smoked paprika
All-purpose seasoning
1 tsp garlic powder
1 tsp onion powder
About 2 tbsp nutritional yeast
1/4 tsp cayenne pepper
1 tsp sugar to balance the flavors (optional)

Start by cooking the noodles according to the instructions on the box. Once cooked, drain them and set them aside. In a small pot, melt 2 tablespoons of butter over low heat. Add flour and stir for approximately 2 minutes. Gradually pour in about half of the room-temperature milk while stirring continuously. If the sauce is too thick, you can add more milk, but be careful not to add too much because the sauce will become runny. Next, add half of the cheddar and mozzarella cheese or however much you prefer. Then add the seasonings from the ingredient list to the sauce and mix together. Grease a baking dish and combine the cooked noodles and cheese sauce together. Mix well and sprinkle the remaining cheese on top of the mac and cheese. Cover the dish with aluminum foil and bake at 350 degrees Fahrenheit for approximately 35 minutes.
