I made this last night (the day you posted-lol). In my years of being vegan I have made probably 20 mac and cheese recipes. This one is the best. Nisha, you've cracked it. Last night my husband said, through mouthfuls of this pasta - "IDK what you're having for lunch tomorrow, but dibbs." Thank you for being a trustworthy recipe writer. It is so valuable knowing I can follow what you say and know it will be good. (e.g. using coconut milk for this recipe. I would not have done that, but I trusted you that it wouldn't be coconuty and it wasn't!)

I became vegan in January after being vegetarian for a few months. As a picky eater / someone not a big fan of veggies I just figured I have to eat salads or tomato pasta, and thats my life. I tried recipes from other bloggers / youtube people and was always disappointed. The food was "alright...for being vegan." I have made four of your recipes in a row and all of them have been stunning. Ive eaten all of it! (not disappointingly giving it to my boyfriend while I ordered something to eat)
Its unheard of for me to cook something vegan and love it. But you did it :) I bought your cookbook and everything. Thank you for making vegan food so delicious.

I made this recipe on Thanksgiving, and it is A+! I've been a vegan 6 months and used to make a classic M&C with tons of diary cheese. This recipe without any vegan cheese is just amazing and delicious. Find the best pasta you can to bring out this dish. Cheeers!

I've been a meat eater for 23 years and this recipe is BOMB AF. Doesn't taste like real mac and cheese but just as a pasta it's absolutely delicious!! I've sent this to 5 friends already to get them to try it.

If you don’t like coconut milk, you can just use another neutral plant milk (like soy or oat) and then add 2 tablespoons of extra virgin olive oil. It makes it so much richer and smoother and also has a bitter flavour that really resembles cheese

I made this last night. Substitutions I did were cornstarch for tapioca, chipotle seasoning for smoked paprika, and I used frozen butternut squash that I steamed (I just wanted to use as much of what I already had as possible). It came out to be fantastic! I will be making it again.I might try with sweet potatoes since I already have those.

This is by far the best vegan cheese thing I have had. I don't crave almost anything from the old days aside from mac and cheese and ice cream. This is really tasty, super filling, and I was amazed at how well it did to replicate the complex notes in traditional cheeses. Well done, and thank you for sharing this recipe.

Nisha, your recipes have consistenly provided sophisticated depth of flavors that we thought only possible in fine restaurants combined with the comfort food that I thought only my mother could achieve! I have made this recipe three times and your butternut squash based cheese is the best (and healthiest) cheese sauce ever. The crispy topping was perfect and we use chick pea pasta, always wonderful. My parents are dairy obsessed and they loved it, thanks again!

Made this today and it was soooo good! You're absolutely right about the crispy topping: it adds just the special oomph that takes this mac and cheese to the next level! I'm blown away at how delicious this is, while it was super easy to put together. Yet another stellar recipe from Ms. Nisha!

I made this recipe yesterday for my Friendsgiving and it was so good! I didn’t have time to make and add the crispy topping & I didn’t have onion powder but it was still amazing and All of my non vegan friends liked it a lot too! Definitely gonna be making this one again before the holiday seasons over.

I made the sauce the day before Thanksgiving and while it had a good taste, I didn't think it would fool anyone that it was cheese. I told my diners to expect pasta with a good sauce but not mac and cheese as they know it. OMG! It tasted just like a delicious traditional baked mac and cheese. Vegans and non-vegans alike were impressed. I used frozen butternut squash, Ripple Half & Half for my plant-based milk, and chickpea pasta. Next time I'll make it exactly per the recipe. My pasta came in an 8oz box, so I had a bit of sauce left over. Added jalapeno and had with tortilla chips. Again, absolutely delicious. Thank you so much for this brilliant recipe!

This is absolutely delicious. My spouse and son even ate it and they are not veggie eaters. I seasoned with turmeric, chili powder, a little Worcestershire sauce and extra cayenne. So yummy.

I just made this dish and it tastes absolutely delightful! I love coming home from a long week at work to a box of mac n cheese. It’s one of the few holdouts that keep me from being completely vegan. I absolutely adore this recipe! It tastes so cheesy and it’s so satisfying! I love the subtle flavors in it as I’m enjoying it! I didn’t buy any more sad boxed Mac n cheese on my grocery trip this week ;) Your recipe is way more guilt free. Thank you so much! I'm not vegan but am exploring vegan dishes, and I was absolutely blown away by this. I did not expect to like it so much, and I do, it's creamy and savory and I was worried about the coconut milk but you dont taste any of that. Amazing recipe.

I’ve made this twice now. I followed your recipe exactly the second time with the tapioca flour and it does add something. Even my not vegan daughter wanted 3 bowls. I use shells pasta instead of the macaroni shape. I will continue making this.
