Veggie grill is also pretty good it's in beaverton. They have mac & cheese and they are 100% vegan.

Have you tried Vertical diner? They have vegan mac & cheese and lots of other good food. There is one in Oregon and one in Salt Lake City, Utah. The one in Utah has more options but the one in Oregon is still amazing. 100% vegan.
