I've had this before, but not with all the hidden veggies. It usually just has the Butternut Squash as the alternative to cheese.

i grew up being gluten and dairy free. my mom always cooked and blended the veggies so it was cheesy looking. and cooked the gluten free noodle elbows. and added gluten free bread crumbs on top! even though i’m not gluten and dairy free anymore, i still choose that over gluten and dairy full macncheese! it’s delicious.
