Korean street food recipes pt. 2 - tteokbokki
These chewy and soft rice cakes are commonly sold by street vendors in Korea. The rice cakes itself are very plain, so the sauce is packed with flavor.
The main ingredient for the sauce is gochujang (Korean red pepper paste), which is a staple Korean ingredient. It’s spicy, savory and a bit sweet - but taste varies by brand and some brands aren’t as spicy as others. This dish is obviously spicy, but if you want a more mild taste you can add less gochujang. Keep in mind this will result in less flavor though 😉

2c (320g) tteokbokki aka rice cakes
2c (480g) chicken broth
2 tbsp gochujang
2 tbsp brown sugar
2 tbsp soy sauce
1 tbsp roasted sesame seeds
4 scallion stalks
2 tbsp sesame oil
Add the broth, gochujang, brown sugar and soy sauce to a pan and mix well. Bring the sauce to a rapid boil on very high heat and add the rice cakes. Once it starts boiling, let it cook for 5 minutes stirring occasionally so it doesn’t stick.
Then, add sesame seeds and lower the heat to medium and let it cook until the sauce is reduced. If you cooked off too much of the sauce, simply add more broth. When it’s almost done, add the chopped green onion and sesame oil.
Eat with toothpicks and enjoy!
