2 tbsp hot oil

2 1/2 tbsp black rice vinegar
1 tsp sesame oil

One thing to note is that you cannot make it in advance, you have to eat the salad IMMEDIATELY otherwise all the water that draws out of the cucumbers will dilute the dressing, making the salad taste bland. You can prepare the dressing in advance, but only mix with the cucumber just before serving. I like this recipe a lot, I did it many times. Thank you for sharing Stacey.

For my family dietary needs, I substitute Bragg's Liquid Amino for Soy Sauce. Sodium in Soy Sauce too high. And STEVIA for sugar substitute
