Creamy Cucumber Salad Recipe | Easy and Delicious!

This easy Creamy Cucumber Salad combines crisp cucumbers and sweet red onions with fresh sour cream, lemon, and dill sauce that will have you begging for more.

CUCUMBER SALAD INGREDIENTS:
1 1/2 lbs cucumbers
1/2 medium purple or yellow onion
1 Tbsp fresh or frozen dill
1/2 cup sour cream
1/2 Tbsp fresh lemon juice
1 garlic clove
1/2 tsp sea salt and pinch of black pepper

This salad was perfect for a hot summer day today! The only issue I had with it was from the salt, the cucumber released a lot of water and made the dressing a little diluted. I would recommend salting the cucumber in a strainer and let the excess water drain for 5-10 min before adding them to the bowl with the dressing.

In Germany in an almost identical German recipe, we added 1/4 teaspoon of freshly ground caraway and a pinch of sugar. It goes well with broiled fish, Wiener Schnitzel, even Southern friend This was a great video!

Creamy cucumber salad dressing has been my fav since I was a kid, and I’m 46 now 😊. When I can’t have creamy cucumber dressing, I soak cucumbers in white vinegar for an hour and then add salt…so good!

Made this because it was 30c today and we needed to use up cucumbers. Delicious! Added the lemon and the mayo, and i also threw in some sesame seeds and some cubed up cheese for some more texture. Fantastic!

Thanks so much for this cucumber salad recipie.I use mild natural Joghurt 60 percent fat, and sour cream and mixed herbs from Gefro, season with Gefro Spice pepper and salt..and chives.. delicious accompaniment to grilled Steak, sausages and fish..you can add marinated Herring cut into bits and make Herring salad..eaten with baked oven potatoes..or salted potatoes..lovely in summer😊❤I, m sure your son will love this and know how healthy cucumbers are.
