If I could find a solution to the rice wrapper. It's a sugar bomb for a type 2 diabetic.

I know when fresh you can use lettuce, but for easy prep it's not a good choice.

I didn't know about the sauce but the rolls usually i make have cauliflower gnocchi in it some chicken or mutton and some soya chunks after that i wrap all of it in a lettuce leaf then rice sheet leave it on pan for 2 minutes per side there you go
But ngl im interested in the sauce now looks delicious 🫶
Also try to stroke the chicken sometimes it adds extra flavour 😂

If you want better dipping sauce, use lime juice instead of vinegar. Vinegar is poor mans choice in comparison. A bit of birds eye chilli and crushed garlic is mandatory!

If you don't seal the edges, or even only 1 edge, you can put way more veggies in it. Cilantro, anise basil, onion slices, green onion, chives, perilla leaves are all great herb/aromatic options to out into the rolls.

I've made your sauce before and it's pretty good, I love fish sauce but next time I'll add a little less because it was very strong haha and I didn't realize it at the time but fish sauce has a ton of sodium in it!!!
