1 tbsp oil from sun-dried tomatoes
1 large onion finely chopped
3 cloves garlic minced
1/2 cup sun-dried tomatoes drained, chopped, keep the oil
6 oz spinach chopped
1 1/2 cups half and half
1 tbsp Italian seasoning
1/4 tsp salt or to taste
1/4 tsp pepper or to taste
1/2 cup Parmesan cheese freshly grated
1 tbsp fresh basil for garnish

It seems like a lot of onions. And where's the garlic? This dish is on the lighter side, I think shallots would work better. Cherry tomatoes would be a nice alternative to sun-dried, which can be overpowering. Overall, it looks like a delicious meal.
