Packed with flavour, my Tuscan Chicken in Creamy Sun Dried Tomato Sauce is the ultimate chicken dinner. Serve with pasta, potatoes or just a big hunk of bread to dip into that creamy sauce.

Ingredients:
4 chicken breasts
1 large egg
3 tbsp plain all-purpose flour (replace with gluten free flour blend if needed)
1/4 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried paprika
1/4 tsp garlic salt
3 tbsp olive oil
1 brown onion peeled and sliced
2 cloves garlic peeled and minced
1/2 tsp dried oregano
1 tsp paprika
1 cup (160g) sun dried tomatoes I like the bright red one from the deli counter
1 red bell pepper de-seeded and sliced
1 tbsp tomato puree (paste)
1/3 cup (90ml) white wine
1 cup (240ml) chicken stock (use bouillon for gluten free)
pinch of salt and pepper
1/3 cup (90ml) double (heavy) cream
1/2 packed cup (50g) parmesan cheese grated
3 packed cups (90g) fresh baby spinach
1 tbsp chopped parsley

Being a Father of 5 & 12 year old girls, I am slowly dying inside from a lack of adult food. My kids are not the most adventurous food wise. Everything that we cook is repetitious and really designed around what they will eat.

Well I have started putting my foot down lately and have been forcing them to try new things whilst simultaneously rediscovering my palate and love of cooking.

This has been one of those recipes that have done just that and funny enough for my family as well.

It was lovely and so easy to make. Even had leftovers six hours later and that was even better.

Just cooked it for my wife. I used boneless, skinless chicken thighs. I also baked a loaf of ciabatta bread, sliced it, added olive oil, put it under the broiler, and rubbed garlic on top of it.
I lined up 3 slices of the bread on her plate and poured the chicken on top of it.
Long story short, it was one of the best dishes she’s ever had.

I made this dish yesterday for friends and they loved it. This dish is truly amazing. Thank you for sharing it. I was scared of making this dish and screwing it up. When I made it, it sat for a little while on the stove cooling off a little so all the flavors jut settled in. I can't tell you how awesome this dish came out. After the meal, everyone threw me on their shoulders and paraded me around the street singing, "For he's a jolly good fellow"... haha, ok so that last part didn't happen. But that dish, came out ridiculously amazing.

I’ve made this meal at least 30 to 40 times in the last two years. I always make a double batch and pack it up for my daughter and husband for their dinner for the week. Don’t sleep on this recipe. It’s so darn good.❤❤❤❤❤❤

I made this for my parents tonight and it was honestly the best meal I have EVER had. It uses just the right amount of herbs to not be overpowering but still affect the taste. My parents said that it was also the best they've had as well! Thanks so much for this phenomenal recipe!

I made this for dinner last night and it was absolutely delicious! I just made a few adjustments by using chicken thighs and I cooked them in the air fryer first. Then instead of using heavy cream, I used about 1/3 cup of lower fat cream cheese. I put it on mashed potatoes as you suggested and presto, my husband loved it! Will definitely be cooking this again. Thanks for the recipe and video.
