This creamy Tuscan chicken is perfect for the nights you want something flavorful without all the extra time. Full recipe below ⬇️

*Ingredients:
- 3 boneless, skinless chicken breasts (butterflied)
- 1 tbsp garlic & herb compound butter
- 2 tbsp olive oil
- 1/2 cup sun-dried tomatoes, chopped
- 4 cloves garlic, minced
- 1 cup sliced cherry tomatoes
- 1 cup white wine (optional substitute with chicken broth)
- 1 1/4 cup heavy cream
- 1/2 tbsp dried oregano
- 1/2 tbsp garlic powder
- 1/2 tbsp complete seasoning (optional)
- 1 tsp smoked paprika
- 2 tsp salt
- 1 tsp red pepper chili flakes (optional)
- 1 cup baby spinach
- 1/3 cup grated Parmesan cheese
- Fresh parsley & basil for garnish (optional)

**Instructions:**
1. Before seasoning butterfly chicken breast and add to a large bowl. Drizzle olive oil with olive oil, season chicken breasts with salt, pepper, and seasonings on both sides. In a large skillet, heat olive oil and oil from the sun-dried tomatoes over medium-high heat.
2. Add chicken breasts to the skillet and cook until browned on both sides, about 5-6 minutes per side. Remove chicken from skillet and set aside.
3. In the same skillet, add shallots, sliced cherry tomatoes, chopped sun-dried tomatoes and minced garlic. Cook for 2-3 minutes until fragrant. Deglaze pan with white wine and scrape any browned bits from the bottom of the skillet.
4. Stir in heavy cream. Add compound butter, parmesan cheese, and more seasonings/salt to taste. Add spinach, basil, and chopped parsley and cook until slightly wilted. Return the chicken breasts to the skillet and simmer for 7-10 minutes, or until chicken is cooked through and the sauce has thickened slightly. Garnish with fresh parsley if desired.
