Creamy Tuscan Chicken Soup

I christened it "Tuscan" because it has Tuscan vibes to me :) Never mind authenticity, it's 100% delicious! Beautiful creamy soup with chicken bites, swirls of spinach and finished with a sprinkle of sun dried tomatoes (this is the "Tuscan" part - LOL)

I tried this yesterday and it turned out delicious! Only thing different I did was add a few small pieces of Parmesan cheese rind to the soup as it was cooking. That flavor is amazing!

I would substitute potatoes for the pasta because that's how I make mine. Yummy soup.
