Want to make this twice as good? Skip the salt and add a couple table spoons of SE Asian fish sauce instead.

I'd like to add to avoid using a blender and rely instead on a good food processor that chops, like knife chopping, all the ingredients.
Else they may emulsify and we end up with pesto sauce instead 🙂
Remember that you did good if there are green pieces in between your teeth 🙂

Hi, this IS NOT CHIMICHURRI, it's a shame people get the wrong idea and recipe by watching videos fron not native people, so...sorry to tell you...but a s an argentine, I know this national and Argentina's creation..."chicmichurri" made ONLY to enhance the ASADO, barbecued different meet cuts, and not for any other purpose nor for vegetables, traditionally. It doesn't contain any shallots and other ingredients, unless and only: oregano, parsley, garlic, vinegar, seeds oil (sunflower, corn, etc) salt, some pepper, and hot water.That's it!
