This recipe for roasted chickpeas is easy and delivers crispy and crunchy chickpeas. They are great as a healthy snack or to sprinkle on salads or soups. They do not last for too long so don't make too many! Store them in a sealed container -- once they are completely cooled down. Enjoy this delish recipe!

Roasted Chickpeas
2 - 15.5 oz. (439 grams) cans of chickpeas (garbanzos)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon paprika
3 teaspoons olive oil
Heat oven to 400 F (200 C).
Drain and rinse the chickpeas. Leave them in a colander for 10 to 15 minutes allowing to continue draining. We need them to be dry.
Place the chickpeas inside an aluminum foil lined roasting pan. Spread them out into a single layer. Dab the chickpeas with a paper towel. Try to dry them as much as possible. Remove any extra skins and discard.
Place the pan into the oven for 15 minutes.
Mix all the spices in a small bowl.
Remove the chickpeas from the oven and roll them around with a fork. Carefully drizzle the olive oil, a teaspoon at a time. You want to get all the chickpeas covered but not drenched. Roll around with a fork.
Evenly sprinkle the spices on top. Roll around with a fork until all the chickpeas are coated.
Return the pan to the oven and cook for another 10 minutes. Remove and roll chickpeas with a fork. Return to the oven. Cook for another 15 to 20 until the chickpeas are crispy and crunchy.
Turn off the oven and slightly open the oven door. Allow the chickpeas to cool down in the oven. Remove and enjoy!
