Well, I make a mean Mushroom Gravy. (I prefer that to onion gravy) 3 beef sausages ( the long ones) Mashed potato with butter, chicken salt, then I mash again (twice) with a few drops of Full Cream milk to give it a nice creamy appearance. I Love to then mix in a wee bit of warm saurkraut with a few thin slices of jalapeno pepper to give the mash a wee bit of heat ❗

Just made this last night. Got the recipe from Google, but it didn't have mustard in the mash. It's ok. I made six lbs. of pork sausage, so I can do it your way. Sounds delish.

Try the onion gravy with red onion’s there sweetness cuts through the gravy better

Mushrooms gravy with horse radish and course ground mustard. Adds a little zip.
