I made this last week and was blown away. This is probably the best vegan cheese recipe I've come across and I love that it doesn't rely on coconut oil or refined starches. The only note I have is that the carrots make it just a *bit* too sweet. Could one of the carrots be swapped out for another root vegetable? If so, which one would you suggest?
