Smoked Prime Rib Recipe | Smoked Prime Rib On A Pellet Smoker

In today's video we are talking smoked prime rib, but more specifically we are talking about how to smoke the perfect prime rib on a pellet smoker. I know smoked prime rib is often intimidating for some folks but it doesn't have to be and if you follow this video recipe I can promise you will have an absolutely delicious smoked prime rib dinner for the holidays, or any day for that matter! If you have never smoked a prime rib before whether it be on a pellet smoker or any smoker, you're truly missing out on some wonderfully flavored prime rib. In my opinion you cannot beat the delicious flavor of a medium rare smoked prime rib! The seasonings I used from @PSSeasoning were absolutely amazing and I will have links and a discount down below if you're interested in getting some for yourself! I swear these rubs were made for smoked prime rib!

Now let's get into the prep and cook on this smoked prime rib recipe:
The Prep:
-Trim the fat off of the prime rib (optional).
-Tie the prime rib up with butchers twine.
-Season the prime rib liberally with kosher salt and put it into the refrigerator for at least 1 hour per pound but I recommend overnight for maximum flavor on the dry brine.
-After the prime rib has dry brined, remove from the refrigerator and season with PS Seasoning Chop Shop and Primetime seasonings (links below).
-Let the prime rib sit out and come up to room temperature for at least 1-2 hours.
-Transfer to cooking rack (optional)
The cook:
-Fire up your pellet grill (or whatever cooker you're using) to 225º.
-Put the prime rib on the smoker and rotate the prime rib ever 30-60 minutes for even cooking.
-After one hour put a probe in the center of the prime rib. If searing with a GrillBlazer (link below) set the internal temperature for 122 degrees. If you're going to sear on the pellet grill set your internal temperature for 110 degrees internal.
-Once the smoked prime rib has reached 122 degrees internally sear with the GrillBlazer. If using the pellet smoker to sear, once the prime rib has reached 110 degrees internal remove from the smoker and let rest. While resting turn up the pellet smoker to as hot as it goes. Once the smoker is up to temp put the prime rib back in and cook until desired doneness is reached. Please take into account that the prime rib roast will carryover in temperature during the cooking process anywhere from 5-10 degrees so be sure to monitor the internal temp and plan accordingly.
-After searing, let the smoked prime rib rest for approximately 30 minutes.
-After the prime rib has rested slice and enjoy!
