Good deal. I trim mine cold, then dry brine in my extra frig on a rack for 3 days b4 I smoke mine. 1890's infused oils are convenient for me to get locally, so I normally use garlic I fused oil from them but I made garlic confit in particular this year for my prime rib so that oil is my binder.

Prime rib is my favorite in the world. I don't have it often. The last time I had it was probably 1015 years ago. This right here made my mouth water. I would eat all that.

I live in Germany and we don’t eat prime rib like this, but me, since growing up in the US love prime rib exactly the way you made it. I will have to do it in the oven… Thanks for your efforts. God Bless …

That looks damn perfect AB. Here’s a little extra thing I do that maybe others will like as much as me: whenever I get the bone-in roast like this I do the exact same thing as AB before cooking, cut the bones off and then tie them back on; it’s just way easier to remove them after the cook by doing this beforehand. But I’ll pull my roast a little earlier, maybe 125 in the middle and then crank the grill as high as possible (while the meat rests about 10-15 min) and throw the roast and bones face down on the heat. I do about 2 minutes on the roast and 1 minute on the bones to build a crust on that side where they were connecting. It just adds one more side of bark to enjoy; it’s especially nice on those bones.
