I just wanted to let you know that you have helped this 55 year old who was on her first diet at age 3 change her life. You, along with my therapist, have helped me break terrible food habits. Probably TMI but from the bottom of my heart thank you. Add more instead of restrict has been life changing.😊

Breakfast: £1.19 per serving. 200ml whole milk, 50ml porridge oats and ¼ pack of grapes. Heat the oats and milk in a saucepan on a 3 on the hob with a pinch of salt and 2 Tbsp sugar. Cut grapes in half and place in top.

Lunch or dinner: £2.32 per serving. 1.5 Tbsp oil, 1 onion, ½ bell pepper. 75g pasta. 75g Quorn pieces, ½ tin of beans, 30g tomato puree, 10g smooth peanut butter. Seasoning

Cook 1 onion in 1.5 Tablespoons of sunflower/ vegetable oil on 3 or 4 on the hob with 1 bell pepper. Cook pasta on 6, let it boil for a while then turn down to 3. Put 75g of frozen Quorn pieces in with onions, when soft add in ½ tin of beans. When it's golden, add 30g of tomato puree and 10g of smooth peanut butter. Add in Italian seasoning with paprika and pepper seasoning or all purpose.

I always make rice, pasta or potatoes with beans and veggie meat alternatives (like Quorn mince, Quorn pieces, sausages and tofu) with vegetables like bell peppers, frozen veg, carrots, sometimes zucchinis and I always have onions or spring onions.

I made a really yummy soup the other night that was super cheap! Roasted sweet potatoes, bell pepper, and onion, then puréed it with veggie stock, a drained and rinsed can of white beans, garlic, chili powder, smoked paprika, and some chipotle chile powder. It was sweet and spicy and savory and so good! And pretty cheap too! I’ve been getting into veggie/bean soups lately because they’re cozy for fall, cheap, and nutritious.

When I was going through the worst time in my life during the pandemic, I lived on canned beans 🫘 carrots and any veg on sale and any cheese I could afford. I wish you’d do another video like this for people without stoves and stuff… my puppy and I were living in motels.😢

The two cheapest fresh vegetables I can always find are cabbage and carrots. You can learn to use them in a lot of different ways.

A long time ago, when I'd just moved out of home and was poor, I realised that the more money you have to spend on food, the cheaper each healthy meal can be. As Abbey said, seasonings and spices cost millicents per serving, but the initial outlay for a few different spices can be half your budget.
I try to never forget that.

One of my favorite, super easy, and affordable snack or dessert recipes that i make (as a college student) is frozen greek yogurt bark-- takes 5 mins to prep, then chilled in the freezer for a couple hours, and is ready to snack on throughout the week. In the recipe, i lay out a piece of parchment paper, followed by spreading on a thin layer of vanilla Greek yogurt, then drizzle some peanut butter and add toppings of choice (i personally love a chocolate chip and banana combo😋), then freeze!! Super easy, healthy, and affordable! I would suggest buying the Greek yogurt in bulk for this recipe; additionally, buying in bulk may be more cost friendly as well!
