Do not take Jamie wrong, he respected Ned Stark a lot. He even got pissed when his guard pierced his leg with a spear because he wanted to give him a fair fight.

I understand Jaime obsession with Ned during that time, he thought he was the strongest after allegedly "defeating" Arthur dayne and wanted to test himself. When I first watched this I underestimated Jaime but it all makes sense now.
