I learned to make Thai food at Naung Mae Kitchen in Hilo Hawaii from a Chef like this one. I feel the complexity and depth of flavor in Thai cooking rivals that of Indian cuisine. They both use numerous spices and herbs to create an incredible flavor that you can only get learning from the origins. Amazing video, thank you Chetna!!

I'm drooling again.
There are a lot of local variations of vegetables and fruits in Thailand (South East Asia) that we don't see in Europe. From my travels there several years ago, tomatoes and bananas are come to mind, but there are more. That's why it's so hard to recreate (near impossible) the authentic taste of a dish you eat on your travels. That said, I've eaten wonderful Thai food here in London. Lovely video, I look forward to your Thai recipes.

Wish I could get all those fresh herbs but have to make do with a jar of red paste from the nearest oriental supermarket 🤷🏻‍♂️. Amazing video by the way!

That looked so delicious.
By the way, was the person filming sometimes blocking the sound from the camera? Because the volume kept shifting from normal to muffled all the time, which made it a bit difficult to understand at times.

I don't know how it is in the UK, but I have never been able to find either of those aubergine types in NZ. Seen some chefs that use red grapes as a substitute - prick the skin!

I believe the leaves you have labeled in the video as "kacholam leaves" are kaffir (aka makrut) lime leaves.
