Eggplant parmigiana
I’d be absolutely over the moon with excitement every time my mother flew to America to visit me. The very first thing l’d ask her to make is her legendary southern Italian eggplant parmigiana. Just thinking about her filling my home with the mouthwatering aroma makes my heart race. Each layer of tender, golden fried eggplant, lovingly crafted and paired with thinly sliced prosciutto cotto, smothered in rich tomato sauce, and generously topped with melted mozzarella and Parmesan cheese, is pure
perfection. And now, with her living here full time I get to enjoy my favorite dish whenever I want.

Eggplant Parmigiana
Ingredients:
2 eggplants
1/2 pound of honey roasted ham thinly sliced or prosciutto cotto.
1 cup of all purpose flour
1.5 cups of shredded mozzarella
1/4 cup of grated Parmesan
Salt and pepper to taste
Marinara sauce
Instructions:
Cut eggplant into 1/4 inch slices.
Salt lightly and place them in strainer for thirty minutes.
Rinse your eggplant slices and dry well with paper towel.
Now season your flour with black pepper and light salt.
Prepare your pan with vegetable oil on medium heat.
Dip your eggplant slices into your seasoned flour on both sides and fry a light golden colour.
Place on paper towels to absorb excess oil.
Have your marinara sauce next to your pan and Now you’re ready to assemble. See video for process.
Preheat oven to 350 degrees and bake (covered) for 25 minutes and uncovered for 15 minutes. Let sit for 20 minutes before serving. Enjoy !
