I just wanted you to know, I turned 80 this year and this is the first time I made eggplant parm after watching you, that I actually loved it. Thank You so much. The fact that you don't salt it, and let the eggplant sweat was amazing to me, your method is so simple it did't take me no time it was in the oven and on the table, it was delicious . I, also love it cold in a sandwich... Great Show

I'd love to make this, but just a question about the eggplant: Do we need to salt it and leave it to get tender, or just slice and use as is? I know eggplant can be a finicky vegetable to work with.
