Keep up with the explanations. Really annoys me when chefs do something but don't explain why, you guys are great at explaining so we learn too. Nice work

I love crispy edges and I've never understood why so many pros are like "crispy edges mean you're doing it wrong". Finally someone who's willing to accept the crisp.

From the US, sunny side up, cooked on only one side. Over easy, cooked on both sides, but with still a bit runny white. Over medium, cooked on both sides, with the white completely set. Over hard, with the yolk broken/ or cooked slowly enough that both yolk & white are completely set. Fried egg, close to over medium, but browned. From an actual cook. We aren't afraid to flip our eggs here!

When I want a more cooked yolk but don't want to flip, I put a big pot lid over the frying pan. I also use a non-stick pan and spray oil when I'm trying to be healthy but can't be arsed to poach or boil my egg.

There's no perfect fried egg, just perfect fried eggs. Same with pasta sauces, video games, soda flavors etc. Have it your way, and excellent video again Sorted boys.

I was literally licking egg yolk off a plate while I watched this (it's still breakfast time here in LA). Eggs are my favorite food by far. Well done, Ebbers!

Can you break down the different kinds of eggs - and which ones are good for what type of cooking? I like duck egg for Benedict - mostly for presentation, and orange-r?

My grandma taught me a faux poach, small hot pan with butter, add egg, then add a few tablespoons of water and cover with a lid. Soft and silky even if you cook the yoke all the way through.

The best way is similar to the olive oil technique but with butter, if the want to use less butter or oil put on a lid for a bit and it'll cook the top and you'll still have a runny yolk.

I love a crispy fried egg. I'm American and my aunt always fried hers in bacon or sausage fat and spooned the fat over the egg to cook it. Very delicious.

American here and the only time I flip over a fried egg is if I’m making a fried egg sandwich, otherwise I cook them the same way as Ben cooked the first egg, except I like the crispy edges of the second egg.

i use just enough oil/lard/butter to grease the bottom of the pan, i put the eggs in while the pan is still cold, then cover it and set it on low heat. they are basically steaming and come out nice and fluffy, no excess greasiness. if you want the yolk to set completely, cook for a bit longer. if you want crispier bottom, use higer heat. easy to control and once you've done it afew times and found the sweet spot in time/temp, they will come out perf every time.
