I managed 6 waffle houses. Even as a manager, you were on the grill all day. I had a customer that always wanted 6 over easy. He made a deal with me that if I could do them all in one pan without popping a yolk then he'd give me $10. If I failed then he'd eat free.

He quit doing that bet after losing $60 😂

I flipped eggs at Denny's for 12 years starting in 1970. We didn't use Teflon egg pans, only stainless steel with a pat of butter and room temperature eggs. Handles wrapped with cotton string against the heat. You learn the flip with practice and it becomes muscle memory. I can still do it today.

Edit: 1970, not 1971. High school (2 years), college (4 years), post (6 years). Denny's earnings paid for half of my college education, and condo down payment.

Great commentary. Kind of got a bob Ross feel too it. I like my eggs over easy as well. That's my New Year's Eve challenge to learn how to cook over easy eggs like this. Thank you!

There is a much easier way to make over easy eggs with zero flipping and zero breakage. Cook them with a lid over them and add a little water to create steam. Perfect over easy eggs every time and they look pristine. I've cooked thousands of eggs this way and they always turn out great.

I was an egg cook at Metro diner for a few years. Everytime I see egg I get flashbacks to those brunch services. A perfect over easy takes skills. Kudos Chef. Good looking eggs

Use the curved side of the pan to aid in the flip, as I saw you do. It’s actually smooth jerk, back that flips the eggs. With larger quantities of eggs, weight becomes a factor. Therefore, landing technique is of optimum concern. To practice, put dried beans, any kind, in the pan and practice “flipping” (getting “air” under the beans) until you can keep the beans from bouncing out, upon landing. Lots of things go into it, subconsciously), but I think it’s mostly the wrist that acts as the shock-absorber. I live to flip. Been cooking since 1972, but have just recently (last 15 years) worked as a breakfast cook. There is much to master, as an egg OR omelette man, in a high volume restaurant and I LOVE it… no butter (grease), no brown and no busted yolks is my credo😊

I like them just a little more on the flipped side. that yolk is like gold when it's not over cooked.

If a breakfast cook can flip 3 eggs w/out breaking them, he is most definitely a keeper. Hardest thing to do is flip eggs while taking car of 2-3 skillets during a breakfast rush.

I used to do that. Easy. But you WILL break a yolk sometimes. I discovered it’s better to put a small splash of water in the pan and lid it for 10 seconds. Steams the top. No need to flip. Perfect every time.
