I made this bread today and it is delicious! Toast it and slather it with a little garlic/parsley butter...Voila perfect garlic bread, then cut into croutons for Caesar salad!!!

I made it with mayo instead of the sour cream. No whey powder. Still turned out pretty good! No doubt the best keto bread I've tried. Having this recipe is a game changer. Thanks!

I made this tonight and it was great, taste just like bread, it is dense like a bagel! I increased the ingredients to 11/2 times and baked 77 Mins. I covered the first 10 mins. Then watched and when it looked brown on top loosely laid foil on top to prevent over browning, it does brown more than I would prefer, however not to hard to eat. I’m going to try to mage French toast with it in the morning!

Thank you for giving two options! I’m growing really tired of keto having to be a cabinet full of powders or things that aren’t available in a grocery store or cost and arm and a leg. I can’t always find isopure in my area and by the time I get to ordering something, I give up on the whole thing.

Sour cream does two things...it’s acidic and reacts with the baking powder, giving it rise and it gives the bread a softer texture and moistness so it’s no so dense. I use it in coffee cake...you don’t even taste it.

I am definitely gonna try this one...when I get done with the 2 loaves I made today using a full dozen eggs! That's crazy to me. Plus, I'm kinda sick of that eggy taste that won't go away with stevia or yeast. Thanks!

I just finished a loaf.
A few things - I have made fathead dough before, but never this amount.
Be patient about the 30 sec heating with the whole milk mozzarella and the cream cheese. I tried to hurry it by putting it in a bit longer and moisture got squeezed out of the mozzarella, making it harder to combine these. My dough was MUCH wetter because of this, but it baked up fine. I suspect it took longer to get it to come together because of this separation, too. I've made regular bread and kneaded it - this seemed to take almost as long or longer.
I didn't add anything to the top, so when I went to put the foil over it, the loaf wasn't browned at all, like Joe's was in the video. Maybe his topping made it brown faster, I don't know. I just forged ahead and covered it. It was nicely browned when I removed it.
Bonus: The house smells wonderful from the baking!
Finally, the hardest part is waiting for the thing to cool. Once it was just warm to the touch, I did take it out of the pan to hasten the cooling a bit. I used a standard one loaf metal pan.
My loaf is a bit more yellow. Maybe it was my egg. No worries, it tastes terrific. My non-keto husband said it was good. That's a real thumbs up right there.

Just made this bread it is the best I’ve tasted since I started my journey it does take a while to bake but the taste is dead on soft chewy with a great crust

Scrunching the paper tightly, then smoothing back out will prevent any shaping issues in pans. Nice recipe.

Hi! I'm just recently got into the keto dietary and loving every minute of it. I've decided to follow your keto bread recipe because the outcome looks so delicious, just like real bread, with only one egg used! However I might have made some rookie mistakes. When I combine the dry ingredients together with the wet, was the dough supposed to be super oily? I baked it for 85 mins ( coz I used only almond flour) and let it cooled completely. Bread was very dense, the insides was still oily when you pressed down...which makes me think I might have underbaked it. I might have to adjust the placement in my oven and it tasted really cheesey, more salty than a normal bread. However it has a nice crust and looks almost like an artisanal bread. Thanks for your videos, I'm definitely gonna try again. Maybe I'll lessen the cheese amount and increase the baking time. If anyone has any suggestions, I'll be more than happy to know. Thanks!
