Hi everyone! Today I am helping you all out wit your busy schedules by giving you 3, 30 minute meal ideas! Oven Baked Quesadillas, Quinoa Tofu Scramble Bowl, and Chick’n Parm Pasta. Perfect for any meal, all info is down below!

Oven Baked Quesadillas
Quesadillas
5 tortillas, of choice
8 ounces (227g) extra firm tofu
1 tablespoon taco seasoning
1 teaspoon garlic powder
1/2 teaspoon cumin
1 teaspoon salt
3/4 cup (193g) vegan refried beans
Heaping 1/3 cup (45g) vegan cheddar cheese
Heaping 3/4 cup (80g) vegan mozzarella
Pico de Gallo
1 tomato, chopped (about 4.7 ounces/130g)
1 jalapeño, chopped (about 1 ounce/30g)
1 green onion, chopped
1/8 sweet onion, chopped (about .5 ounce/20g)
1/4 lemon or lime, juice
Salt, to taste
Quinoa Tofu Scramble Bowl
Roasted Veggies
16 grape tomatoes (about 2.5 ounces/75g)
2 patty pan squash or 1/2 zucchini (about 7 ounces/200g)
1 medium gold potato (about 7.5 ounces/212g), chopped
1 1/2 teaspoons (8ml) olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon red pepper flakes
1/2 teaspoon paprika
Quinoa Scramble
1/2 block (about 8 ounces/227g) extra firm tofu
3/4 cup (90g) frozen quinoa
1 teaspoon (5g) vegan butter
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon red pepper flakes
1/2 teaspoon paprika
Few large handfuls baby kale (about 2.5 ounces/70g)
Chick’n Parm Pasta
10-12 pieces frozen vegan chicken (about 10 ounces/288g)
9 ounces (256g) heart of palm pasta
Large handful spinach (about 1 ounce/30g)
5 ounces (145g) frozen broccoli
1 cup (240ml) tomato sauce
4 tablespoons (20g) vegan parmesan
1/3 cup (37g) vegan mozzarella
Salt and red pepper flakes, to taste
Basil, for garnish
