Definitely trying the mushroom pasta for dinner. Thanks for the recipe. Not really into processed food that much and fake meat in particular. Would love to see more recipes with beans, nuts and seeds as the protein source.

These all look delicious! Pasta is my go-to quick meal especially when cooking for myself. Maple curry noodles are a staple for me. I have never thought to save pasta water for leftovers!

This reminds me of Olive Garden's Zupa Tuscana soup only with gnocchi instead of the potatoes. I made that all the time using Beyond Sausage. Quick tip if you're using Beyond sausage: cook it in the pan with oil WITHOUT the veggies. Remove it with a slotted spoon and put it into a bowl and then cook the veggies and flow the recipe. Don't add the sausage until you serve the soup because it becomes soggy and takes on a mushy texture. For leftovers I store the soup and sausage in separate containers and spoon the soup into the bowls and then the sausage and stir the soup and it tastes amazing! I've served my veganized version of Zupa Tuscana to my VERY NON-VEGAN friends and they were all shocked that it tasted so much like the OG version and that it wasn't animal sausage that they were eating!

I don't like seitan sausage and Beyond is my go to, so I use it a lot for stuff like this. I haven't been able to find the Impossible links but will say that Impossible burger meat has the same propensity for becoming mushy when cooked in sauce or liquid, so I always add it last to dishes too whenever I can. I just cook it in extra oil and use that oil for the veggies so that the sausage or meat flavor is throughout the dish.

I LOVE gnocchi and can't wait to make the soup. The pasta dish reminds me a bit of a stroganoff and looks amazing! Thank you so much for the recipes! 😊

It is worth noting that regular wheat pasta itself is high in protein too. About 20g for 5oz

Your mushroom pasta is a revelation! Creamy mushroom pasta has been a staple of mine since I first went vegan, and I've always used soy cream, but recently in the UK food prices have soared and soy cream isn't as affordable as it used to be (85p to £1.20 for 250g)
Soy milk and flour are cheap and always in my pantry, so this dish will be made much more now!
