👨‍🍳 Vegan High Protein Cheesecake 2.0 Recipe
1 (15oz) can chickpeas (or 1 ½ cups cooked chickpeas, 250 g)
2 cups (280 g) cashews (roasted, unsalted)
1 (7 oz) (200 g) package firm tofu
1 cup (130 g) dates, pitted
1 lemon (zest + juice)
1 tsp vanilla extract
1 cup (240 ml) plant-based milk

Protein Content Total: 101.83 g plant-based protein
250 g cooked chickpeas = 22.15 g protein
280 g cashews = 42.48 g protein
200 g firm tofu = 26 g protein
130 g dates = 2.34 g protein
240 ml soy milk = 8.5 g protein

Been making this a lot. A piece after a hard workout is great for recovery. We found 365 kcal a bit much, so now cut the cake into 12 pieces at 243 kcal each. Still 11 g of protein. Nice!

I just made it. Judging from the taste test before cooking it must be deliscious and just like the german Käsekuchen I remember from my childhood. Can't wait for it to cool down in the fridge. Do you think it freezes well?
