yep finally someone who doesnt put cream. just one last tip: it seems you were cooking way more than 300 grams of pasta, 3 eggs isnt enough. 1 egg per 100 grams of pasta

I’m sorry but I wanted to know if you were meant to leave the eggs uncooked ( meaning that you put the sauce on the pasta and turn off the heat right away) or if you are supposed to cook the pasta afterwards with the sauce for a long time. Thanks

bacon is fine. depending where the "authentic" location it came from guanchiale wasn't always available. some times you gota make it work with what you can get. as long as ur "cream" is egg yolk and whatever grated cheese you can get. I've even used grated asiago I got by accident it was behind the pecorino and it was delicious lol. make it how you like it. just no damn cream!!! my nonno and nonna would roll in their graves.

since wala ako bacon or guanciale. i use pure foods fiesta ham. and it taste fine!

I used pork belly cut into small cubes, and queso de bola with eden. Gotta make do with what’s available

Yan ndi nakakauya sa sobrang dami ng cream at 3 types pa ng cheese nakalagay. May nakita akong ganon. Alat siguro non hehe

this is not carbonara though, the bacon is wrong (at least pancetta) and the cheese is wrong (pecorino romano) Also I make it only with egg yokes, but I guess thats ok.
