This video shows you how easy it is to make pasta carbonara at home. There's some technique involved, but I provide clear instruction every step of the way.

This delicious, creamy dish is a family favorite and it's clear why. Tons of cheese, salty cured pork, and eggs produce a rich pasta dish that's packed with flavor. An authentic carbonara has no cream and can be a bit tricky to get just right. The key is to thoroughly mix your eggs into the pasta off the heat so they don't scramble. The traditional way is to use a bowl when incorporating the egg, but it's really not necessary.

Most ribbon pastas will work for this recipe. I make spaghetti carbonara, but linguine or fettuccine are good choices as well.

PASTA CARBONARA RECIPE
(serves 2)
Pecorino Toscano, 2.5 oz. (or 71g, romano or parmesan is traditional)
Guanciale , 4 oz. (or 113g, bacon or pancetta works too)
Sea Salt , about 2 Tbsp
Freshly Ground Black Pepper , to taste
Dried Pasta , 10 oz. (or 284g, preferably a dried ribbon pasta like spaghetti)
Eggs, 2 each

Joshua, I make a veggie version simply by omitting the pancetta and substituting with peas. We make this once or twice a month at home and I am the only vegetarian in the house.

Hey Tim! Just saw this video and I was wondering how I might make a vegetarian twist on this dish. 

I am thinking lot's of olive oil, to make up for the lack of fat from the pork, and maybe garlic or shallots. What are your thoughts?

geez, this seems like a very hearty carbonara! thanks. for the recipe. for those who are saying that this is not carbonara, we al have different ways of doing carbonara. others use cream while others use eggs.
