This delicious Pumpkin & Feta Pie in filo pastry is easy to make... it just needs a little time for the preparation, and once cooked can be stored for a couple of days in the fridge until ready to eat and reheats well too. It can be enjoyed cold.

It's an original authentic Greek recipe shared with Richard by a colleague. It really is divine and makes a super lunch or dinner and would be ideal for an Autumn buffet, Bonfire Night or Halloween celebration. Give it a go. If you use shop bought pastry it's easy to assemble and cooks in about 40 minutes.

I let out an audible 'Ooooft' when Paul tapped that beautifully crisp pastry. Beautiful recipe! I have a huge, very old wooden feed trough that I'll be using as my pumpkin patch in our yard. Can't wait to use this recipe when I (hopefully) grow my own x Kelly x

Hi Richard and Paul, You will possibly remember me saying before how much I like to watch Cooking videos, I like the look of this one BUT i don't have a squash that will do the plate justice however I did ask the wife to buy a butternut squash yesterday and the recipe I have is cut into cubes salt an, pepper and olive oil bake in the oven at 180 for 25 minutes I will try this and if successful that will be the first squash I will have had in 71 years, Thank you as always for sharing and both of you take care.

I made Spanakopita parcels last week after watching Kate Jackson at The Last Homely House East of the Sea make some. I guess you know where this is going now... Thank you very much for the recipe & the demonstration. There's no doubt in my mind that this is going to be amazing.

Well now that looks fantastic! I'm sure the grating of the pumpkin was a bit of a chore though - I'm thinking grated fingers and choice words ... I'm definitely going to give it a go though - I like the idea of adding the pine nuts - yum. Thanking you!

How did I never find this one before? I have damaged pumpkins I need to use up - and homemade feta, dito. So this is absolutely perfect. Will get myself some filo on Friday and try this. (...before or after the broccoli pasta)
