Homemade Meatloaf with Pepper and Onion Relish

2 1/2 pounds ground beef
2 teaspoons salt
1/2 teaspoon black pepper
2 teaspoons Mrs. Dash original seasoning
1 cup finely diced green pepper
1 envelope Onion Soup Mix
2 eggs
15 ounces diced tomatoes, drained
2 cups Quick Cooking Oats
1/2 cup tomato sauce
heaping 1/2 cup Pepper & Onion Relish in the meatloaf mixture
heaping 1/2 cup Pepper & Onion Relish on top

Preheat your oven to 375°. Prepare your meatloaf baking pan by spraying with nonstick spray. Set aside.

In a large bowl, combine the ground beef, salt, black pepper, Mrs. Dash, diced green pepper, onion soup mix, eggs, diced tomatoes, quick cooking oats, tomato sauce, and 1/2 cup of pepper and onion relish. Mix everything together well using your hands.

Scoop the meatloaf mixture into your prepared loaf pan, mound on top, and cover with the remaining 1/2 cup of pepper and onion relish.

Bake for one hour to one hour 15 minutes or until the center of the meatloaf is done. Do not over bake.

After removing meatloaf from the oven, allow it to rest on the counter for at least 20 to 30 minutes before slicing.

It's funny to me how people get all butt hurt about not using gloves or removing jewelry, good grief, I mean your fixing the dish for your family, I am sure they know you're clean.. just saying. What a delicious meal.

Lovely to see a bloke who feels so strongly about being married to his wife.. been with my husband for 37 years.. he still hasn’t married me. If he did, he wouldn’t wear a ring or want one. So.. it’s just nice to know there are guys out there who do wear a ring and feel strongly about that bond. 👍

The best thing about meatloaf I can say is a meatloaf sandwich the next day from left overs & I bet that pepper relish will be a standout with it Tom & Melissa!

Tom and Melissa, I wanted yall to know that I made your recipe for meatloaf and it was a hit! My husband and son said it is the very best meatloaf I had ever made and we've decided that this will be our forever meatloaf recipe 😂 it is so delicious that my husband, who doesn't like meatloaf, ate so much that his stomach was hurting from overeating. Walmart has a 10 oz jar of Harry & Davids pepper & onion relish its $12.95
Wanted to let you know. I add salsa instead of tomato paste & tomatos because it has peppers onions spices & other ingredients.
I enjoy your recipes & will definitely continue to watch from S.C.

Hi Tom, OMG I couldn't wait to tell you that I made this meatloaf and my grandchild absolutely Loved it. They wanted to know today are there anymore left overs. I made a large one Tom, it was so big because I knew there wasn't gonna be enough if I hadn't. The only thing I added was a pack of mild Italian sausage. And I forgot to tell you that the Chicken and Stuffing Casserole was a absolute hit too so thank you so much Tom and do have a blessed week you and your family.

I will need to look for that relish in my area. This sounds wonderful! My former pastor's wife gave me a wonderful meatloaf recipe. She forms several mini loaves, fries in skillet just till brown. Then she puts in a 9x13 pan and puts topping on each loaf. I love the crusty edges & topping on meatloaf so this technique works out great for us! I have been binge watching your videos today. I have saved several on my Pintest boards. You two have been a blessing to me. I also loved it when Tom said he will not take off his wedding ring & gave the reason why. That is so sweet! I love watching you all!

I love meatloaf. I make a zesty topping out of ketchup, brown sugar and yellow mustard. So good!

I use stovetop stuffing mix. I use a rolling pin and smashed them into crumbs. It also gives a great flavor to the meatloaf.

First time watching your videos. Your meatloaf recipe sounds scrumptious and I will definitely try it.
My husband was a BBQ man and I loved watching him cook. He passed away 5 months ago so, Malissa, enjoy every moment you have with your sweetheart. You're a very blessed couple and I look forward to watching more of your videos.

Well, I can tell you, that is restaurant quality meatloaf! It looks so delicious! Now, I’m on a hunt for onion and pepper relish bc I think its a key ingredient! Thanks for this recipe! It’s a keeper I can tell! I also saw a recipe for pepper and onion relish on Pinterest. It was simple sounding too.

I have my Grandmother's recipe for sweet pepper relish. It uses red and green peppers in equal amounts with a very basic "brine". She would get a bushel of each and we had to help grind them up. It is especially good with meatloaf. Never thought of putting it in the meatloaf though. ❤

It looks like you have surpassed your subscribers goal. 👍🏻👍🏻 The rule of thumb for meatloaf and meatballs (I'm Italian American) is generally 1 large egg per pound of ground meat. 😉

_My_ mother used a slice or two of sandwich bread, but she moistened it with a little milk rather than shredding it. When you knead the ingredients together, the bread breaks down nicely.

Tom and Melissa I have conquered two foods that I have not been able to master until I watched your videos, meatloaf and Formula L Biscuits! Thank you, thank you so much! I made the biscuits a little bit different being I did not knead them. I stirred them in the bowl, floured the surface and poured the dough out, shaped the dough, and cut the dough out. Easy enough. I made the meatloaf exactly as you did. I watched my husband take the first bite, his eyes lit up and he said “it’s delicious”. I separated the the meatloaf into two pans, I vacuumed and froze one for later! I can’t thank you enough for the delicious foods I have made since watching your videos! I’m waiting for a cookbook!
