This no-bake strawberry cheesecake tastes like no other - the cheesecake filling is incredibly light & fluffy while holding its shape perfectly when slicing it. Give it a try if you are looking for a make-ahead dessert to "wow" your guests.
📌 Ingredients To Make No Bake Strawberry Cheesecake
For 9-inch pan
Cheesecake Crust
• Graham cracker: 200 g (2 US cups)
• Granulated sugar: 26 g (2 Tbsp)
• Unsalted butter: 100 g (7 Tbsp)
Cheesecake Filling
• Gelatin (Bloom 230): 7 g (1 pack of Knox gelatin powder)
• Icy cold water: 30 g (2 Tbsp)
* When using gelatin sheets, soak them in icy cold water and leave them for 10 minutes.
• Cream cheese: 450 g (2 8-oz blocks)
• Sour cream: 80 g (1/3 US cup)
• Granulated sugar: 133 g (2/3 US cup)
• Lemon juice: 20 g (4 tsp)
• Vanilla extract: 5 g (1 tsp)
• Heavy cream: 420 g ( 1 3/4 US cups)
Strawberry Topping
• Fresh strawberries: 450 g (1 pound) (cut half in small cubes and the other half in half.)
• Granulated sugar: 66 g (1/3 US cup)
• Cornstarch: 5 g (1 1/2 tsp)
• Lemon juice: 15 g (1 Tbsp)
Whipped Cream
• Heavy cream 180 g (3/4 US cup)
• Granulated sugar: 20 g (1 1/2 Tbsp)
** For best results, measure ingredients with a scale. All recipes are designed with weighed ingredients using grams/ounces. Cup measurements are provided for your convenience. **
