No cream cheese, no problem 🥳🥳
This eggless baked cheesecake is made without any cream cheese but still tastes equally good 🤌🏻🤌🏻
I have used hung curd as a replacement and for 1.5 cup of hung curd you will need to hang about 3 cups of curd overnight!

Ingredients :
1 + 1/2 cup crushed lotus biscuits
5 tbsp melted butter
1 + 1/2 cup hung curd
1/2 cup heavy cream/fresh cream
1 cup condensed milk
2 tbsp cornflour
Biscoff spread (for topping)
Whipped cream (for garnish)
Lotus biscuit crumbs ( for garnish)

Method :
1. In a large bowl, add the crushed biscuits with melted butter and combine till all the crumbs are coated.
2. Transfer the biscuit base into a lined springform pan and using the back of a spoon, press down to form an even cheesecake base. Refrigerate for 15-20 mins.
3. Meanwhile in another bowl, add hung curd, cream, condensed milk and cornflour. Whisk everything together just until a smooth batter is formed with no lumps.
4. Pour this cheesecake batter over the chilled biscuit base and transfer the springform pan into a larger baking dish. Pour hot water into the larger dish to create a hot water bath.
5. Bake this in a pre-heated oven at 170 degree Celsius for 40-45 mins.
6. Once baked, refrigerate for at least 4 hours or overnight.
7. Once set, finish it off by spreading a generous layer of biscoff spread, some whipped cream dollops and sprinkling crush biscuits over it.

Years ago when I was in school, my friend's mom would make this cheesecake. Not a biscoff version but a healthier hung curd based version of lemon cheesecake. She was a doctor so I assume she was going for a healthier alternative!

I ordered a bottle of Biscoff Lotus biscuit spread secretly after watching that hot chocolate video of yours. And I ate it all in a week and didn't use it for any recipe. It was my guilty pleasure. And even though this cheesecake recipe looks super easy and I am tempted to make it, I cannot afford to buy another bottle and end up licking it. I just can't stop myself once I have it in my hand. I gained so many pounds 😭😭

amazing recipe but here are the changes i did
i used chena and blended it to make cream cheese used 330 g of it
used whipping cream but it didnt whip up cuz my mixer broke 1 cup whipped cream
and used bisvoff biscuits to make the spreaf myself 16 biscuits for base and spread
2 tbsp sugar + salt and vanilla
50 g butter for base and 50 g from spread


steps correction ->
make sure the whipped cream us actually whipped and super chill
cream cheese should be super chilled as well
chill the base (15 min)then add the mixture(2 hour) then chill again and then add the spread(1 hour)
enjoy
bas sab kuch thanda hona chahiye and dont overmix it.
i would say freeze for 2 - 3 hours if u r stuck in my situation
