520g bread flour
250ml whole milk
15g yeast
1tsp salt
50g sugar
2 eggs

I made theses! They turned out incredibly fluffy and soft. The fluffiest, lightest textured brioche buns Ive made.
The flavor was mild. Not as sweet and strongly flavored as store bought brioche. Supposedly long cold ferment enhances the flavor.

Excellent recipe. Now saving as my go to brioche bun recipe.

Made these today and let me tell you these were the best brioche rolls I’ve ever made. Completely beginner friendly as long as you have a scale. I even did the second rise in the fridge, took them out 30 mins before baking and they still rose perfectly.
This will definitely be my go to recipe!! Thank you 🙏🏾❤

Here’s how to make this without fresh yeast or a stand mixer:
Add all ingredients as said in the video except use 8 grams of instant dry yeast, warm milk microwaved or stovetop cooked until it is kinda warm and won’t burn you.after it comes together with butter, mix with the spoon till kinda smooth then kneed for 10-15 min until smooth then follow the rest of the steps!

This is very similar to the bread recipe I’ve been using. Like even the measurements are pretty close. I use 525g of bread flour for example. Only thing I do differently is add a tangzong

I tried this with the ingredients. It was extremely dry. I couldn’t get the dough to form at all. It wasn’t gooey at all like in the video. Is something off?

But i dont have a stand mixer. My yeast is going to expire before i use it. I lnow people didnt always have stand mixers so what do i do by hand?
