The *only* part of an artichoke that is not edible are the thorns on the tips of the outer leaves. The choke (the hairy part under the purple leaves) can be a PITA cuz it like to stick to your throat, but it's still edible. And the purple inner leaves are 100% edible.

Bruh you didn’t say the choke was not edible I had to search it up and I did eat some but it’s ok
