Everyone I see always cuts the stem but my family always ate the stem after we skinned it!!

The leaves will stab you! Even the pink ones on the inside. Be careful when handling.

I thought the heart/middle of the bud would be the best part?

Is the purple part unedible, or whatsup?

Oh, but that wasters too much! I off the very top, stem and tip of each petal.(leaf) Steam top down in water, inset knife fin stem or tenderness not mushiness. Only eat the meaty part of each petal. Gently scoop out the fuzzy purple part (don't eat!) to find the heart. I make a mayonnaise dip with drops of balsamic vinegar and soy sauce, add black pepper. My favourite. It's a meal.
